When using supermarket type pizza bases, put them on a pizza tray, and then sit the pizza tray on the stone.
This tempers the heat on the base some, making a noticeable difference.
Its all about trial and error, but the above will help.

I cut in at 80 minutes and it was near medium so took it off then and rested. I used your temperatures and room temperature meat, So it came out quite nice in the end,

Hi guys and others :) Got so used to using wizmos, gizmos, thermapens and the like I forgot how to go manual. How crazy is that!! How hot does a Q get after about 30 minutes flat out? Reason I ask is wouldn't it be easier to cook your pizza in the oven if the heat is similar?
