THE AUSSIE OUTBACK TRUCKIE
A truckie who has been out on the road for three weeks stops off at a brothel outside Kalgoorlie .. He walks straight up to the Madam, drops down $500 and says, I want your ugliest woman and a burnt chop.!! The Madam is astonished. 'But sir, for that kind of money you could have one of my finest lad...

The Horth Withperer
A bloke calls his mate, the horse breeder, and says he's sending a friend over to look at a horse. His mate asks, 'How will I recognize him?' 'That's easy; he's a dwarf with a speech impediment.' So, the dwarf shows up, and the breeder asks him if he's looking for a male or female horse. 'A female h...

Re: Different Slaughtering Methods
Maybe someone with more firsthand knowledge will chime in but my understanding from a theoretical perspective in red meat is that……. Electrical stimulation is used for a number of reasons and can have an impact on meat quality. Electrical stimulation is used for immobilizing the animal for slaughte...

Re: Not sure how I feel about this...
I seldom find any store brought brined meat anything more than average at best... Was disappointed again today to see aldi had lamb racks for 20 bucks a kg but insist on marinating them... Why? Because the majority of consumers aren't like the people here and don't have the knowledge of cooking, fl...

Re: Not sure how I feel about this...
Well my verdict is don't bother with this product. Very tender and not at all dry however the flavour was distinctly lacking especially in the meat. Even after I drained the liquid to reduce it to thicken it up, I added a generous teaspoon of vegemite and about a tablespoon of gravox, the sauce tast...

Re: Not sure how I feel about this...
Got this in the slow cooker as we speak. It's definitely brisket except it's been pre-diced, they should've said it on the pack as the indication is it's in the piece. I used the sauce but added some worscestershire to cut the (assumed) sweetness and some bbq sauce for some smokeyness and a bit of w...

Score!
So anyway, me and the young fella are out at the tip to look for a chain guard for his bike, you see our tip here in Canberra has a big shed where they sell stuff that people have thrown out but are still in usable condition. No luck on the bike front so we wander through the bbq section as I don't ...

Re: Cross Eyed Rottweiler
The other day I took my rottweiler to the vet as he had crossed eyes. The vet picks him up looks into his eyes and says to me "I'm going to have to put him down". I said, "what because he's cross eyed???" The vet said "no, because he's heavy"  Thanks marty.....

Re: Oyster Blade, nice!
Yep called flat iron steaks. I've never tried them as you describe, only as normal oyster blade steaks.
Don't worry about the connective tissue as that gelatinises ok just through normal cooking, well enough for me any way.
Expect to pay around $14.99/kg.

Re: Bacon Week & the $120 Bacon and Egg Roll!!!
Nothing wrong with having a personal preference! The issue with sourcing true free range product is it only makes up 1.7% of total production which is why it's a bit more difficult to find not to mention expensive. Even outdoor bred, where the sows are outside but the weaned pigs are raised in conve...

I think you'll find their animals are slaughtered in the conventional manner.

Re: Bacon Week & the $120 Bacon and Egg Roll!!!
Any ideas of which butchers are getting in decent slabs of backfat? Off non-factory pigs of course Hey Ross, first of all there is no such thing as "factory farming", it is a term used by animal activists to paint animal production in a poor light, take a look here: http://www.aussiepigfa...

Re: Bacon Week & the $120 Bacon and Egg Roll!!!
No Ross, got side tracked and by the time I got around to it it had gone too slimey. Talking with a couple of mates as to when we think it's cold enough to make some salami, probably ok now!
