Yep called flat iron steaks. I've never tried them as you describe, only as normal oyster blade steaks.
Don't worry about the connective tissue as that gelatinises ok just through normal cooking, well enough for me any way.
Expect to pay around $14.99/kg.

Nothing wrong with having a personal preference! The issue with sourcing true free range product is it only makes up 1.7% of total production which is why it's a bit more difficult to find not to mention expensive. No Ross, got side tracked and by the time I got around to it it had gone too slimey. Talking with a couple of mates as to when we think it's cold enough to make some salami, probably ok now!
