Been a bit of a hectic day so no BBQ adventures today; Just would like to revisit this business about wood chips. As the only wood for smoking we seem to be able to get here in Sydney is wood chips I thought I would comment/present them to you.
The ones I use are bought from our friends at Barbeques Galore and they aren’t too bad.
They currently stock the following:
Beef and Lamb, Poultry and Seafood:

They are each blended with a number of types of wood:
Beef and Lamb (Mesquite, Cabernet, Hickory Wood Chips)

Poultry (Mesquite, Chardonnay, Apple Wood Chips)

Seafood (Mesquite, Chardonnay, Alder Wood Chips)

I do soak them in water prior to using (about half an hour should do it) and throw them on the hot charcoal a few minutes before I put the meat on.
and then there’s the Jack Daniel’s pellets:

These should be used in an aluminium pouch and can be placed on the hot charcoal immediately before the meat is put on the BBQ.

I find I use the pellets when I have a longer cook and I need to put the chips on multiple times. Otherwise I just get the blends with the type of meat…
Now if you ask me what would you rather have: single type of wood chips or blends of wood chips… The answer is easy single type all the time, I don’t like not being in control and not knowing how much of the different types of wood they have in each parcel (and whether this varies between batches?). Unfortunately beggers can’t be choosers and until I can source some chunks somewhere I’ll just have to make do with these….

Where can I get natural, untreated Australian wood chips, like mountain ash? I’m worried these imported woods are treated with bug killers, etc, like creosote, to kill any pests.
I’m keen on identifying where large amounts of mesquite or hickory (preferably mesquite) can be obatined in Australia to go into my Texas smoker. Given mesquite is a weed of national significance in Australia, you might think someone is trying to get rid of it from somewhere!
Anyhow, if anyone knows where to obatin mesquite in bigger quantities than just chunk-sized – I’ve love to know!

I’m one frustrated would be smoker, if only i could find fruit wood chips or sawdust in Australia. I tried all online and offline to obtain apple-peach wood chips here in Auss but no go, all they selling in BBQ galore is euqalyptus woods which I do NOT want to use to cure meats and fish. Makes me want to curse Australia for being so far away from everything.
Any help in pointing me in the right direction is welcomed.
Hello, I am looking for mesquite wood, do you know where can I buy some? In Peru we call this tree Algarrobo, and gives a beatiful taste to the BBQ chickens. I don’t want it blended though, would prefer logs than chips.

@ Ute Sarauer – You can find wood chips etc in BBQ Galore , Rays Outdoor and Anaconda, if you seek and get out of the house you will find them…..or go back to your home country if you dont like Australia…
Also @ Ute Sarauer- As ‘your daughter states, you can find international smoking chips all over the place- just have to look.
Eucalyptus wood makes excellent smoking for fish and meats. You are probably thinking that it doesnt due to associating Eucalyptus with the oils in Euclyptus- however these oils are the leaves not the wood. Red Gum is similar to Oak and Melaleuca or Paperbark is similar to Hickory. Tasmanian salmon is smoked with Tasmanian hardwoods such as various Eucalyptus varieties.

The mesquite is sourced from Karratha where it grows as a pest, quite a lot of effort involved in getting it, but well worth it to the serious smoker.
