So I started the long road (maybe) of finding a butcher to supply me with all my meats.
Not sure if I made it clear that I will not be making myself “known” i.e. the butchers I shop at only see me as another customer (albeit with a bit more interest in BBQ meats and different cuts?).
Maybe I’m getting too enthusiastic but I reckon that when you find a good butcher it should be made known to the world that that butcher is a great one (especially if it’s a local Sydney one?).
So anyway I went to B1 and found myself some pork ribs bought 2 slabs about 900 grams each at a kg price of 10.99. I haven’t taken them out of their wrappings yet as I intend to cook them form tomorrow’s dinner (going out to the neighbours tonight). They look good though…
The butcher itself is a decent size (on this Saturday morning I saw at least 4 people at the front counter and another 3 working in the back). I asked about brisket (which is not a standard cut here in Oz) and they were very helpful they had some cuts already made however they were too small (I want a 4-5 kg piece so I can do an overnight cook). They suggested I call on a Friday for a Saturday pickup and gave me a business card.
Ratings on a scale of 1-10 (1 is baaaaad and 10 is beyond excellent)

Price 6 (mainly because I have no clue whether 10.99 is a good price need to do comparative shopping)
Quality 7 (looks good bt the main rating will be given after I BBQ these suckers)
Service 8 (defenitely a high rating very helpful and willing to supply to my requirements)
