Well it took a 2 months (and have had various butchers I used) but I reckon I found a worthy butcher for my BBQ adventures. Although some of them (Dee Why was good) came close I feel the overall helpfulness and variety/quality of meats of this butcher made the choice easy. So who is it? Read More→

Research: butcher (5b) – B2 Rolled Loin of Pork (crackling)

So after a little nights sleep and a busy day I estimated the cook to be ready around the 20:00 mark. I decided to start the cook at high temps (approx 475F) which should result in nice crackling. Finish it of with a temp around the 375F for about another one and a half hour for this 2kg loin of pork would mean a total cook of approx 2 hours (end internal temp at 160F). Well I’m going to put some effort in finding a local supplier of my meats. As I’m reading and cooking a variety of meats I sometimes search for obscure cuts and I would like to get at least consistent quality.
