Midweek Chili and Garlic prawns

BBQ Adventure: Chicken in white sauce on KK

Well I finally found some time to cook on the BBQ. Decided to cook a couple of chooks. They’re easy and if I cook two it usually means leftovers so more effcicient (and delicious). The recipe I chose was an Alabama style chicken in a white sauce (yeah, I’ll post the recipe on the forum!). Strangely enough the sauce has vinegar (and mayonaise etc.) but it actually seems to “work”; it tastes great with the smokey flavour of the chicken. Read More→

BBQ Adventure: Roast Sirloin Beef (using roasty bag)

We had a friend over for dinner tonight and cooked up some roast sirloin beef. The rub we got from taste.com.au but I modified the recipe slightly to accomodate cooking with a roasty bag. BBQ Adventure: Butterflied leg of lamb

Well we had some friends over on Friday (read 8 of them; well actually 7 since one of them fell sick at the last moment). We had some butterflied lamb on the Komodo Kamado.

Research: butcher (5b) – B2 Rolled Loin of Pork (crackling)

So after a little nights sleep and a busy day I estimated the cook to be ready around the 20:00 mark. I decided to start the cook at high temps (approx 475F) which should result in nice crackling. Finish it of with a temp around the 375F for about another one and a half hour for this 2kg loin of pork would mean a total cook of approx 2 hours (end internal temp at 160F). BBQ Adventure: Roasted Duck (crispy skin)

Well I thought a Saturday would be a good time to try out another duck (specifically how to get crispy skin). In the morning we went to the monthly organics markets in Sydney Darling Harbour and bought a peking duck. The guy suggested we had muscovy but although this type of duck has more meat we like the taste of peking duck better (less chewy!), so we bought peking.

BBQ Adventure: Roast Beef with Gorgonzola Sauce

Well again it’s been busy at work so I didn’t have very much time…
Since BBQ-ing (in this case grilling) is an easy thing to do I cooked up a Roast Beef (heart smart at Woolworths). Yeah I know I really really need to find me a good butcher (I have some for various cuts but not a single one; ah well that’s going to be a little project over the next few weeks/months.
