was too distracted by SWMBO questioning continually to remember to take photos but it worked well.
Basically slowly simmering a Pork Belly in Cola is hard to stuff up even though it passes cooked temp the fat is slowly rendering and the core being protected on top by the fat and on the base by the bones is very forgiving.
The second cook basted in sauce works well and to the recipe is not too tangy for kids but really nice although I was the only one having extra sauce on my cuts and a 1.6kg belly was finished by our family of four youngest 8 who is mister fussy when it comes to meat.
Would I do it again in a minute my kids said it was the best pork I have cooked yet. higher praise...
not sure how much the Cola does over any other liquid but simple and fairly foolproof the only difficult part would be doing the crackle but this can be done whilst resting the Pork.

I managed to get a good crackling with my pork belly (chinese style) yesterday on the Q220.
Scored the skin with boiling water, rubbed white vinegar, poked many holes on the skin, cut several lines on the skin, and then layer of salt. Left open in the fridge to dry out overnight.
On the weber was the double layer A-foil, trivet, then drip pan, then another trivet and pork on top.
First 30mins on slow (minimum temp).
Then next hour on highest temp.
Turned out very nice cracking with the meat still moist and fat was breaking down very easily. The wife enjoyed it as well, so all good.
