Re: The Lamb adventure begins.
I can taste that already!
And a Question for Marty or Ian.
See the red dye stripes....when I do Lamb like this for a catering job, I'd like to get rid of it, so I'm starting with a clean canvas. Is there a way of washing it off?

Re: The Lamb adventure begins.
Sorry Chris the ink is indelible to prevent mis representing mutton or hogget as lamb.
Lamb is red strip branded, hogget is yellow and mutton purple.
You can either use it to show you're really supplying lamb or you could trim it off maybe by scoring the length either side and running a sharp knife underneath???

I'll say 18kg?
I also have to say that's a good looking lamb.
Before anyone gets with the kiwi jokes 1. I'm Aussie and 2. I'm talking from a meat quality perspective.
Perverts!
