if you can't find a brisket in the ACT...

...what can you use instead that is "brisket-like"? Would a hunk of chuck work as a sliceable alternative to brisket?

The brisket I have is so sad, I don't know what to do with it, maybe roll it and cook it anyway and then turn it into pulled brisket? I really didn't want to do pulled brisket, though...

any suggestions (or tips for butchers in the ACT) appreciated!

You could use a salt brine and do corned beef then low and slow I cook chuck low and slow all time and comes out delicious

great thanks! I have used chuck for pulled beef with delicious results - it just didn't look that appealing for slicing...

found another butcher at the farmers market who will procure a brisket for me from 280kg carcass - should be a bit better then the skinny slab i have now. Sadly they don't butcher for another couple of weeks. oh well, absence (of the brisket) makes the hard grow fonder...? :mrgreen:

Chuck works just as well. Some of the bbq places in the US also smoke chuck. But they call it "shoulder clod"
