Wagyu beef ribs smoking now.

First time poster.

Got some wagyu beef ribs smoking with mesquite and hickory. Put them on at 9:30 this morning. Lots of pepper, some salt and lots of time.

I'll report back mid Avo with the result. If anyone can help me post a pic I'd be most grateful.

Most moist and tender things I've ever eaten. Once I work out the pic situation I'll post all the pics. If I could swear without getting blocked I woukd. That's how good they were. Cape grim Wagyu was worth every cent.

3kg of cape grim wagyu ribs

salt and pepper only

mesquite smoke at 275f for first 3-4 hrs

half way point, gave them a spritz with stock, worchestershire and granulated garlic.

tender as anything and super moist.

I cooked the same ribs on Saturday!

They are not Wagyu though. Hope the butcher didn't sell them as Wagyu. Lots of Cape Grim has nice marbling.
I'd be interested to compare what we paid if you want to pm me.

Mine had about 9 hrs in an Akorn Kamado. Pulled them out at 203f.

my missus brought them from the Vic market. They were like $18 a kilo. Expensive but worth it.


Can buy cheaper ribs for $9 a kilo from a butcher in the broadmeadows shop. Cooked some the other week. Not bad but nowhere near as good as these.

just asked the boss. She cant remember what they were marked as. Either way there was heaps of marbling and absolutely delicious.

Yep, They look good!

They'd be Cape Grim Grass fed Angus Short Rib.

From the same supplier (Greenham) you would get Robins Island Wagu, if it has Cape Grim on the pack it is Angus.

Yep same butcher I use. I tried cheaper ribs before the Cape Grim too...waste of a Saturday.
