cooking 3kg rump.

Hi

I will be bbq'ing a 3kg rump on the baby q, indirect on a trivett etc, I use a remote probe and cook to internal temp, my question is does it make a difference whether it is cooked slower using a lower temp, it still has to get to the correct internal temp right? will i notice any difference taste / tenderness wise.

Yes it still has to get to temp. I wouldn't do rump real slow though. I do it at 150c, which is in between roasting temps (180-200c) and low and slow (110c-120c). I just find I end up with a more even internal temperature that way.

When you get thrsrse internals to around 55c, take it off and ramp up the grill temp to about 200 plus and reverse sear the outside all round.

Yep, I'd have it off at 45C and be searing it.....even less if I'm not feeding Management :cry:

In a weber baby Q I can't see any point other than just roast it at normal roasting temperature.
3 kg is a fair lump but low and slow isn't going to do anything unless you go to very low and slow like the Route 66 for 15 hours or so. Your little grill is not up for that without a shed load of work.

What you could do in the future is look at Souse vide as it mimics the very slow cook then flash sear it.

Weber q,s arnt designed for low and slow. They have built purpose. Grill and roast
