Grilled Drunken Chicken
GRILLED DRUNKEN CHICKEN
4 –6 chicken breasts
375 ml can of Beer
125 ml (8 tablespoons) Soy sauce
1 tablespoon of white sugar
2 Garlic cloves, mashed or finely chopped
Juice of 3 lemons
1 medium onion, finely chopped
Squeeze the juice of the lemons over the chicken and let stand while preparing the rest of the marinade.
In a large bowl, combine the beer, soy sauce, sugar, chopped onion and chopped garlic. Drain the lemon juice from the chickens and pour into this mixture.
Put the chicken in the marinade, cover and refrigerate overnight. Make sure the marinade covers the chicken.
Preheat the Q™ on high for 10 minutes. Set up for indirect cooking with a trivet and foil. Turn the heat down 2 strokes from high and cook the chicken for about 20 – 30 minutes (with the lid down) turning every 8 to 10 minutes. Brush both sides of the chicken pieces with the marinade each time you turn them. Alternately cook the chicken indirect on a kettle for 20 – 30 minutes as above.

I actually made this a couple of nights ago for the first time on my q320.
I'm really impressed at how juicy and tender chicken breasts come up on the Q320 - whether it be this recipe, or just grilling with some herbs and spices.
I found this recipe really easy to prepare and the output delicious,even if not all that great to look at.

Sounds nice, what do you think the beer adds to the flavour?
And don't say "beer taste"!
Would it be like a background wine flavour such as when using white wine?

The beer gives it an earthy undertone and helps reduce the acidity of the lemon juice whilst maintaining the citric flavours, Because of the PH level it helps transport the flavours into the flesh. It also adds a certain bitter maltiness to the flavour profile. The sugar in the recipe helps reduce the bitterness.
You can always try with wine but you will completely change the flavour profile.

Nope I will stick with the original. Always best to try a recipe as written first time before any alterations.

Tried this today, with a 10 hour marinade, and very large chicken breasts. Cook took 40mins due to large breasts. (A few smaller offcuts cooked perfectly in 10 minutes)
Delicious taste, another great Captain Cook recipe!
Beer is obviously the most overpowering taste in this dish, but I'm sure without the other ingredients it would taste odd. For my next attempt at this dish, I might do a quick sear to add that BBQ charcoal taste (should I do this at the start or end?) and maybe cut the breast into strips to allow for faster cooking and more flavour (?).

When we made it on the weekend we cooked it on a charcoal grill . Family love it.
