Just off the Baby 'Q' a ~500 gm Porterhouse steak
Oiled up and covered in cracked peppercorns
done Med/Rare
Temp = Roast position
4 x mins each side, turn gas off and allow steaks to rest laying opposite direction on the griddle for an extra few mins
An experienced cook & now a Weber Baby 'Q' devotee...

That looks sensational....and i'm gunna try your technique next time to see if it works with the Q320.
Never tried leaving the steaks in the Q for an extra 2 minutes after turning gas off but it kinda makes sense.

Dave they have to be very thick cut steaks, I ask my butcher to cut them extra thick for the BBQ
I use my iphone to time the 4 mins each side at the Roast setting (not maximum) then turn off the gas and turn the steak over, so the griddle marks will give the cross hatched design each side.
Then I guess the few minutes the steak sits on each side - with the lid remaining down.
