Happy I gave this a run as it was absolutely delicious. It will stay as a every now and then dish in my house.
I even thought it could be up there, If not better than smoked pulled pork done the traditional way. Next Time I do a smoked pulled pork I know what flavour profile I will give it
I went with the baking pan method, To the cubed collar butt I added
salt
pepper
garlic
mace
sweet paprika
bay leaf
orange peel
orange juice
olive oil
water

Mixed that up then covered in foil and threw it in the pellet bbq set on 130C for 3 1/2 to four hours.
till it looked like this

Then took the meat out and strained the liquid. Place the meat back in the pan and drizzled over with some pan fats/liquid. Then under the oven top grill to brown up turning once and basting again.

Served with a guacamole that I threw everything into.
