Pork Belly 3 ways

Pork Belly 3 ways

Grabbed a Belly, deboned and removed the skin.
Belly was marinated overnight in a Vacuumed bag with a ready Made Korean sauce.

Ont the Acorn using Fruitwood as a smoke flavour
Cooked for about 2.5 hours and wrapped for later use.

Diced up some Vegetables to make pickled side.
Simple brine of salt and sugar.

Meanwhile Wife made some Dough for steamed rolls in her contraption.

And she diced up some Vegetables to put in Rice paper Rolls.

Thickened the Marinade with the pork juices to make a sticky sauce.

Sliced the Pork and Seperated into 3 differnt styles,

Assembled the Rice Paper rolls.

Made the Steamed Buns

And Crunchy Pork pieces in sauce over steamed rice.

Gotta say this was delicious, plus we then spent 2 hours cleaning up the mess.

Titch,
I have just bought a beautiful slab of pork belly after drooling over your cook which reminded me of this beauty of a dish i got at a byron bay brewery years ago

So I was just wondering what cooking times/temp and internal temp I should be aiming for? as will be my first belly!

How do you want the Belly cooked?
Belly is like Lamb, ealy versatile and forgiving meat
Skin on or off, My first BBQ belly was a rough copy from the BBQ pitboys

Cheers for the link. I cut the skin off scorched and was going to do separately hopefully that's not a no no as I was assuming a tender pork belly would be sitting around 250f for a few hours atleast and obviously wouldn't crackle up at those temps.
Meats marinating in a home made hoisin style marinate.
