Hi all,
Well I'm finally off to the US this morning, with my first stop being Seattle where I'm spending this coming weekend cooking with Rob from smoking pit.com on his Yoder Wichita Offset & YS640 Pellet Cooker - cant wait! I'm then off to Wichita Kansas to catch up with Don & Joe at Yoder and check out the factory & do some cooking.
I will try to post up some photos in the "What did you cook" section ( although I'm not quite sure how from iPhone , lol )

I just dropped David from GrillPro off at his hotel down on Commencement bay. David’s a great guy! We did a little grilling on the YS640 tonight. We cooked up some Steak. Two steaks were from a 12.3 lbs. Loin Strip that I dry aged for 30 days. We cooked a Flat Iron steak as well. Both were very good but the dry aged strips were..... Well, I let David chime in with his opinion. He also has some photos. Maybe we can talk him into posting the pics and some feedback on the steaks. We also enjoyed some Jim Beam Red Stag. Tomorrow we will be cooking two turkeys. One Mad Hunky Brined with a garlic butter and Rosemary seasoning and one with just seasoning. We will also be slow cooking a beef roast on the Yoder Wichita. In the evening we enjoy some Jack Daniels as we prepare and wood fire cook two pizzas on the Wichita. I hope David will be going home well fed!

David has wifi in his room. He also has wifi at my place. I also made sure he has access to Jim Beam Red Stag, Jack Daniels, Sedka Vodka, Tripple Sec, Captain Morgans Tatoo Rum, FIreball Cinamon Whiskey, Tequila, Guinnes Extra Stout, Negra Modelo, Budweiser, Bud light Platinum, Arogant Bastard, Rogue Dead Guy Ale and Baily's. I have a fully stocked bar for him to enjoy. Tomorrow he gets to fire and operate my Yoder Wichita stick burner. It will be a blast.

Well, he did rough it a bit. He has gone 3 days without red wine! We had a great time today. Here's what we cooked.
Cold Smoked PepperJack and Mild Cheddar cheese using the Amaze-N-Tube-Smoker
We solid injected beef roast with garlic, onion, mushrooms and rosemary. We coated the oustside with coarse ground black pepper and fresh garlic. Smokked on the Yoder Wichita
Cooked up a batch of my BBQ sauce.
We slow smoked thick sliced Bacon on the Yoder YS640.
The last cook of the day was a Hickory wood fired pizza with fresh Mozzarella, pepperoni, canadian bacon, smoked bacon, red onion, mushrooms and green bell pepper. Coooked on the Yoder Wichita.
David also got to go through the process of upgrading the firmware on the Yoder YS640 to the lates U26 firmware revision. After a 75/25 mix of Jack Daniels & Coke (heavy on the Jack) I dropped him off at his hotel.
I have to say I really enjoyed the visit. You Aussies are good people.

I talked to Andy, he does the demo cooks for Yoder, and he said Dave was to leave the states on Monday. Andy left Dave in Wichita Saturday night. Haha, yes I survived my trip to the US, thanks for your concern guys. ( I have just been playing catch up since I returned ) I think Im a few kgs heavier after all Rob" & Andy's cooking! My trip was awesome and the hospitality was nothing short of fantastic.
It was really good to meet Rob & cook with him in Tacoma Washington, people would kill for the view from his balcony .....
Simply stunning, I never got tired of looking at it
Rob & I did some great cooking ( I have posted some pics from my trip under the "What Did You Cook" section ).
I also met ( via Skype ) Rich from Mad Hunky & to say he is a character is an understatement. I took a photo of him & his Mad Hunky packaging & they look the same .... I have a photo but didnt know if it was apropriate to post , lol
Rob & I used Rich's Mad Hunky Poulty Brine & it was excellent, I totally recomend it. The Brined Turkey we did was so much jucier & tastier than the non brined one we did.
Grill Pro will be importing the Mad Hunky Poultry Brine for anyone that wants to try it here in Australia. ( we have some in our first container of Yoder Grills )
I also cooked with Andy Groneman in Wichita, Kansas on the Yoder YS640 & Wichita Offset Smoker & learnt alot there also.
My visit to the Yoder factory in Yoder Kansas was also excellent. It was refreshing to see workers who really cared for their finished product & excited that they are being imported into Australia & New Zealand.
