Cape Grim Brisket

Picked up a Cape Grimm brisket from Herbie's today, first time ever for me cooking a brisket so I am expecting either perfection or a disaster. It will go on the BSK before bed tomorrow night for a Saturday dinner time feed.

Anyone who has cooked a full brisket on a Kamado before that would care to share their experience more than happy to hear. Interested whether people trim it or not (I am inclined to leave the fat on) and whether people injected or not.

I did not inject my Cape grims,They cooked magnificent, let the meat shine.

Wagyu brisket is also worth a go to compare. The last major comp at Bangalow NSW was won with one. Use the stoker here for overnights in a Kamado for the larger from whoever.

Where in Japan are you getting your Wagyu from Cardshark?Got confused with the Wagyu brisket you mention as I speak Japanese and you said Japanese beef brisket. Or are yo talking bout Japanese beef stock reared in Aus.which producer are you buying from?

The wagyu for bungalow I used was a blackmore.
There is also sher, tajima and a number of others avaliable in aus.

VIcs meat market Sydney fish market has them also.......
