Cooking Times for Low and Slow

Hi Guys

If I want to cook on weber kettle low and slow what temperature should it be at and how long do I cook for per kg.

Buy/ use a dual probe thermometer. Grill temp @100C, time to internal meat temp.

Buy decent meat and briquettes like heat beads.

Pulled pork minimum time is from 6 hours and may be as long as 12.

Thanks. Not sure what you mean by time to internal temp. Thinking about doing roast beef. I am not sure how long it takes to cook at 100-110 c. Just wants to work out what time i should start it so its ready for dinner. Cheers

Cook to the temperature inside your meat. Why you need a dual probe thermometer.

Cooking to time can be difficult. You can start a bit earlier. Once cooked, put in esky and wrap in a towel. Will stay warm for hours.

With beef you have a choice of internal meat temp depending on whether you like it rare, medium rare etc. Also it depends if you want to slice or pull your meat.
