Have to cook up a leg of lamb, pork shoulder & pork loin for my dads 70th. Looking for some help.
They have a bbq that has been made up & escentially looks like 1 1/2 44 gallons drums welded together end on end, lid lifts up. Has holes in the top (no vents) & vents on the bottom.
It has a rack running the length of the bbq front & back.
Not my choice of meats but was thinking of doing low n slow but not sure on the head beead set up. I have done a few lamb shoulder using the snake method 2 flat on the bottom & 1 row on top. Have got a few recipes of people doing low n slow legs off the net but know shoulders are btter for it. Not sure on the pork as i havent cooked them before
Was thinking of setting it up the same way in the racks, but lighting opposite ends to even the heat out in the bbq. Starting early morning. Is it going to be enough beads burning?
I am on the right path here? dont want to stuff this up as there will be quite a few annoyed people i think.

Bit hard without seeing it but.
I would light a fire both ends,minion method,and have the meat in the middle,indirect, and add fuel as needed
