I must have been good this year as I'm getting a smoker to go with the gas bbq and spit roaster. I considered the WSM but the latest ProQ looks like it is better value. I'm going to kick things off with some ribs, then I'd love to give some cold smoked cheese a crack. I've got a half octopus in the freezer that I might marinate and throw on there one weekend when I can devote some time to it. I also saw a recipe for beef jerky in a WSM that I might give a go too. Finally I have a goat in a friends paddock that is fattening up, but I need to decide if I want to put it on the spit whole or get it cut up and cook a bit and freeze the rest for later.
I'm not a real doctor Miss, but I'll have a look anyway.

Should arrive next week. Picked up a dehydrator from a family member as well so I'll be set for dried chilies and herbs
I'm not a real doctor Miss, but I'll have a look anyway.

First feast is complete. Beef short ribs!!

They were tasty, tender and about 1 rib too much for a single meal. Posting the recipe and process for reference (mine included :D )

The ribs were seasoned with pink salt, pepper and a bit of garlic.

Basting sauce was:

1/2 cup of tomato sauce
1/2 cup of cider vinegar
2 Tbs dijon mustard
3 Tbs olive oil
1 Tbs garlic powder
1 Tbs onion flakes
1 tsp chilli flakes
1/4 cup worcestershire sauce
2 Tbs brown sugar

Heated the ProQ up to 250°f. The thermometer in the lid read 200, so lucky I had a couple of digital probes to confirm. I filled the water bowl with water. Used heatbeads with two chunks of hickory for smoke.

Cooked for 7 hours, basted every hour up to hour 5 then left to harden up.

Internal temp reached 190°f and I rested in the esky for 30 mins whilst the cornbread baked.

Meat was very tender, fell off the bone when prodded with my fork. The sauce was a good addition as the chilli gave it a nice zing that the cornbread complimented, probably too hot to eat by itself though.

Wife gave it 2 thumbs up.

Holy Moly Doc Dogg....that looks sensational :o :D look at the colour on those ribs...you gotta be proud of that mate!!

Thanks for sharing your baste...I'll give that a shot.

I've really gotta try and get some more beef ribs...better value now than the anorexic pork racks.

Next time I'll dial back the chilli. 5am wake up was not pleasant.

I think next time I might try them natural and give them an extra hour to get the internal temp to 200°f. I also need a better cornbread recipe, the one Lauren baked was a bit tasteless. The local BBQ restaurant makes one that is sweet, full of flavour and fluffy, that's what I want.
