Hey MM
Just got myself a Hark, good piece of gear. Through it together yesterday and just had to cook something.
But all I had in the freezer was a 2.5kg boneless lamb leg. Was a bit hesitant, didn't think lamb would smoke too well.
Anyway 4hrs later, some hickory smoke and plenty of fresh garlic out came the tastiest tender lamb we've ever had.
Cant wait to get some pork shoulder done, and some ribs.
Cheers

Hi Jonno ,

Yes we have given the hark a bit of a hiding , we have do smoke saveloy, smoked pork sausages, Chinese pork spare ribs in plum marinated. . smoked 80%hickory 20% ironbark.

Tonight I'm do chicken wings, smoked pickled pork, smoked Camembert cheese with bacon bits on top., corn on cob in husks with garlic butter

Roast potatoes and cauliflower Au gratin,

and for sweet is fruit salad dip (fresh pineapple, kiwifruit, Banana & Pear) with a Irish cream liquor cream dip. (600ml sour cream, 6 nips Irish cream liquor & 3 tablespoons of dark brown sugar) mix well and use skewers to dip the chucnks of fruit in and eat, Yummo.

MM :D

I didn't know ducks had nuts!....are they anything like chicken nuggets?

Thanks Mick,
I love mine, did a catering job onn the weekend and filled it up with slices of pumpkin on a low 2 hour smoke, (served with a dollop of sour cream laced with fresh chopped dill).

Cheers
