Re: Brisket temperature during a cook
Personally I reckon Buc and Mick are both right, at least from my experience and in my opinion. I use IT as a guide for Brisket and generally around 203f although it can be done higher or lower IT and ultimately, it's done when a probe slides in like soft butter. Love the passionate opinions though ...

Re: Best overall butcher for American cuts
Tri Tip is the tail of the Rump(Yanks call Rump 'Top Sirloin') Short ribs are a standard cut on Australian meat charts. You just need to have your butcher remove the top muscle layer. Not that it matters but Hanger(Onglet) is more a French cut. Flap(Bavette) is another great French bistro cut, highl...

[quote="Davo"]   Oh God...don't let us go down that path[/ Totally agree, but if a product is misrepresented or there is misleading information presented not based on fact or testing, it won't necessarily only be the poster who is liable if a vendor thinks they have suffered...

Re: Buyers guide
:) Yeah, not an exact analogy, but worth consideration, it's worthwhile knowledge to have before heading off to buy and running into pellet unit sticker shock :) Some very good friends of mine are lawyers, one can even grill a decent steak, but my general opinion of most legal ramifications and the...

Re: Buyers guide
Chrisg, I agree with most of the ideas of your post, however the analogy with the hifi mag isn't the same. Buyers guides tend to follow a format and/or would have tested each unit. The other point that hasn't been considered are the potential legal ramifications of something like this if it is done ...

Re: Buyers guide
Perhaps a conversation of what a Guide like that should contain? And before we start, I had direct complaints from the distributors of some of the products mentioned complaining about the things their products were supposedly not so good at….So not Childish at all! It’s a good idea, something like ...

Could have just been the Brisket. Grass fed fed Yearling can dry out. Go for something older or grain fed 100+ days.
