Personally I reckon Buc and Mick are both right, at least from my experience and in my opinion. I use IT as a guide for Brisket and generally around 203f although it can be done higher or lower IT and ultimately, it's done when a probe slides in like soft butter. Tri Tip is the tail of the Rump(Yanks call Rump 'Top Sirloin') Short ribs are a standard cut on Australian meat charts. You just need to have your butcher remove the top muscle layer. Chrisg, I agree with most of the ideas of your post, however the analogy with the hifi mag isn't the same. Buyers guides tend to follow a format and/or would have tested each unit. The other point that hasn't been considered are the potential legal ramifications of something like this if it is done ...

Could have just been the Brisket. Grass fed fed Yearling can dry out. Go for something older or grain fed 100+ days.
