Re: Meat injector and liquid smoke question.

Hey I'm real keen to give a brisket a go and was wanting to use a meat injector with a nice sweet/spicy marinade. Where abouts apart from ebay would I get a injector from? I also need some liquid smoke anyone know where I'd find some? I was looking at this on ebay http://pages.ebay.com/link/?nav=it...

Re: Looking for apple wood

Now I'm a bit lost... Are you saying that fruit and veg is or isn't frozen??? 8c is certainly not frozen? I really don't want a debate, but there are many and varied storage and product management techniques to meet customer demand that have been in use for a very long time. None of which involve f...

Re: Looking for apple wood

Just some clarification if I may as I work in the industry - There are no fresh fruits or vegetables sold at a retail level in Australia that have EVER been frozen, contrary to what one major retailer is suggesting, other than possibly imported Dates which are arguably dried fruit anyway. Apologies...

Re: Looking for apple wood

There are apple orchards around Bilpin and the Blue Mountains, why not go up there and ask for some? Surely there might be some branches that have fallen that they would let you take? Find a mate with a mulcher. Presto. Henry is spot on,Bilpin NSW is the place for apple, peach and nectarine and appl...

Re: Soy Honey Chilli Smoked Catfish

The catfish look a treat MM, I have never tried catfish,is it a strong fishy taste that you need a rub and smoke. Also were they freshwater or saltwater catfish? I remember as a kid throwing these along with eels back into the water, now both are now delicatcies.

Re: Pork Chops, Potato Grillers and Carrots

Hi MossyMO,

A quick question on the A-MAZE-N tube smoker. I Googled this product and it comes in a 6" length at USD 19.00 plus freight, this might suit my Baby Q. Do you know of or heard of anyone over there using this product successfully in a Baby Q or any other Weber Q gasser.?

Cheers

Re: Pork roast on Q220 help needed

What I do on my baby q is,Dry the skin as much as possible, rub salt and a bit of oil over the skin. Preheat the baby q for 15-20 minutes,so it's hot when I place the pork on the trivet with a double over piece of foil underneath the trivet, with slits cut in the foil for the fat to run through. I lea...

Yes. Make a few slits along the foil,to allow the fat to run through.

Re: BBQ Plate recommendations

There is nothing wrong with that plate, with a bit of elbow grease would come up like new. It has handles on each side, just lift off the plate and start your fire, when the wood has burned to hot coals, spread the coals out, place the lid back on,it would be ready to cook on in five to ten minutes. Chee...

Re: Weber Q healthy?

I have the baby q 100e,which is sufficient for the two of us,it has a drip pan that fits at the bottom of it's base,it collects all the fat that runs off from meats and such. I cannot see why or how it would be unhealthy.

Re: Christmas Prawns - SE QLD

I normally shoot off to Jacobs Well for their Black Tiger prawns, raw or cooked, they might be farmed, but at least their fresh and tasty, best value on the Gold Coast.

Re: Weber Baby Q roasting temperature

Paulio. I also have the baby q 100e,but only the baby trivet which is smaller. What I do is preheat the baby on full for 15-20 minutes, then I place the pork on the trivet(over the doubles foil) close the lid and cook on full for 30-35 minutes, then I turn the heat down to the last or low heat setting...
