I find you can get low temps (220F) on my 320 by turning the dial between high and off (much lower flame than 'low'). Just have to make sure it's not so low that it could blow out in the wind.

I can vouch for the amazingribs.com turkey coking process. Just dry brine with salt and use the wet herb rub - I had Americans falling over themselves last Thanksgiving when I cooked on the Q320.

I've always struggled with beef ribs too. Partly the ribs I've bought (and the amount of fat versus meat on them) and also not cooking for long enough. I've seen some of Chris's on here, but have never got close to that.

These look great. I presume you foiled for the '2' in 3-2-1. Hard to get fall apart beef ribs otherwise in 6 hours.

I'm new to American BBQ so am enjoying the spices and rubs, however my go to is Soy, Mirin and Sugar (basis of teriyaki/yakitori sauce). On BBQ meat (especially lamb) it is out of this world!!! Must be the Umami. I'm super keen to get more Asian flavours going - fresh coriander, tamarind etc

I don't find Costco too bad. Lot's of meat. Most pork ribs cut so close to the bone there's nothing on them and they really dry out on a 4 hour low slow cook - and they're $18/kg for bone.

To achieve those temps on the Q320 what would you set the controls at? You need to just use the inside burner on the Q320 and have the dial sitting close to the off setting (to get the temp down below 225). Keep an eye on the flame so it doesn't go out if it's windy. How do you cook a butterfly leg lamb on a Weber Q?
Hot and to temp? Or slow (to medium rare) and then quick sear? Does it make a difference?

I cooked a Turkey on the weekend that I picked up at South Melbourne market. Followed the amazing ribs website. The Americans at the Thanksgiving dinner raved about it.
