First brisket and mopping

Yup, I do have the book. Looks like I am trying to complicate the best way to do it

Hi :) So doing my first pickled xmas ham on the Weber kettle and got a few questions. I have had a read and still filtering through a lot of posts. Did a supermarket ham some time back based on the guide from the Weber book which was pretty amazing but this is now next level for me, about time :lol:...

Yeah new Weber and first non gas It is a bit tricky going from a flat plate gasser to a charcoal kettle. I put briquettes in the compost and worm farm, but also around my raised beds to keep the snails out. I don't think there is anything nasty in heatbeads.. Sawdust and starch. Excellent work MrB, and thanks for posting. That is one of my all time favorite recipes. As a tip, smoke will only penetrate the meat until the outside seals so it's best to get it in there early in the cook rather than towards the end. First Roast in the Weber Performer
Ok so after a learning curve on my test cook, some great advice from here and a bit more reading I did my first roast last night. My first test cook the other day. Temp was fine on the lid thermo but soon declined. Took me a relight and the temp to drop before i realised I gotta learn to cook uncovered first.
