If I decide to foil it to speed up the stall, and don't take the temp what is the recommended way to check for doneness?

Can anyone give me an idea of what I can expect the temp to be for a 12 pound brisket in the following scenario at 275F constant pit temp? I am trying to plan a cook.... Temp at the end of each hour, foiling it once it gets to 165F internal temp: Hour 1 - Temp? Hour 2 - Temp? Hour 3- Temp? Hour 4 - ...
